In this setting? All of what you said is true without irony.

Not about to let any European Wizards tell us where to center our maps, damnit. We fought a war to see that we wouldn't have to!

Turned my character in for Sal's approval. As the game actually ends up taking place right about the time of the Meiji restoration and the 'death' of the samurai as a class, I have what essentially amounts to samurai turned ronin turned cowboy for a character who's better with his blade than his gun, but at the least does know how to use a pistol.

Think Jackie Chan from Shanghai Noon, only with Japanese with a katana.

Better get used to being mistaken for a "chinaman"

Dude, Asian American is the preferred nomenclature.

Yeah, but Grillick wasn't stepping up to be the know-it-all ass, so someone had to do it. :)

That's because Grillick understands that the appropriate way to respond to a Lebowski quote is with another Lebowski quote or not at all, man.

Actually, it's because that little exchange took place at 7:30 in the morning, my time.

Celestial is probably the preferred nomenclature at this point in time.

I'm still adjusting to the fact that you're not two hours ahead of me and thus automatically up when I am any more.

To me, someone who is Asian American has to actually be born in the USA, as opposed to having migrated there. And yeah, I have a feeling my character is going to get mistaken for a China man a lot. I've only recently in the past few years started to be able to pick out the difference between a Korean, a Chinese man, and a Japanese man myself. Not really expecting ignorant western cowboys to know any better.

Can riflery and brawling both be considered knacks? And if I take them both as knacks, can I use them in unison if I have a rifle that's strong enough to be used as a club?

I know that my vocation is going to be gambling. No way he/she/it isn't going to be a gambler.

EDIT:
What kind of expertise would I be allowed if my aspiration is listed as Bounty Hunter?

Probably for higher status immigrants but a majority of the Asian immigrants were single male laborers who sent the money they made back to their families.

Yeah, especially because it is a rare Texan that would have ever seen a Japanese person before.
