I often browse the forum by looking for unread threads. Some threads, I don't care about, and would prefer not to have them higlighted. Is there some way we can ignore them?

Just having a button to set whatever variable is checked to some value that would never result in a 'yes, unread' result would do the job. Like, if it's done off of timestamp, a button to set the visited timestamp to one hundred years from now would work. Or if it's off of posts in thread at time you visited, setting it to MAXINT would again work.

Is this easy? I don't know how flexible phbb is.

It's a good idea, but I'm not sure we're doing any enhancements at the moment. But we can add it to the list :)
